Twisted Paleo Baked Goods

New to Twisted Paleo are Paleo Baked Goods, including some that are both Paleo and Vegan. Initially I was going to begin selling cookies and muffins in advance of this year's holiday season.  But now that Minnesota's Covid numbers have spiked, I plan to wait until the vaccine is available next year. In 2021 I will be adding cakes, brownies, cupcakes, breads, tarts, doughnuts, candies, etc.  Also on the agenda for 2021 is the addition of some Keto baked goods.

Baked goods are sold by the batch and the price shown is the price per item.  Paleo baked good keep well for a number of days and also freeze well.  I plan on giving away samples of my baked goods with each order that have been frozen and customers can see (taste) for themselves. When I created Twisted Paleo Brownies in 2019, I discovered  that their texture and flavor actually improved with freezing unlike ones with gluten and processed sugar. 

In my baked goods that call for chocolate chips, I list dark chocolate chips in the ingredients–except for Paleo/Vegan items. The Paleo gods (whoever that might be) determined that even though dark chocolate may not be completely Paleo, as long as it is high quality chocolate (no soy, gluten, corn syrup, vegetable oils, etc.), it is allowed in moderation. But there are many chocolate options and some are completely Paleo, and some are organic, vegan, Keto, etc. I am working on a section that provides a lot of options for customers to choose their chocolate.

These products are homemade and not subject to state inspection. As a certified cottage food producer, I must personally distribute my products directly to my customers and cannot use a delivery service.

Almond Butter and Cashew Butter Cookies
These will remind you of peanut butter cookies that have been flattened with a fork, but these are crispy on the edges and a little soft and gooey in the center, and so much healthier.

Brown Butter Chocolate Chip Cookies
What gives these cookies their unique flavor is the really dark ghee (Indian clarified butter) I make for these. I tried making them with purchased ghee but they didn't have the same depth and rich caramel flavor.

Chocolate Drizzled Coconut Macaroons
A macaroon is a cookie that is crispy on the outside and tender on the inside. Traditional macaroons are loaded with sugar and typically are made with sweetened condensed milk. I make my own version of this by simmering coconut milk and honey until it is the same consistency, making them much healthier.

Paleo Chocolate Chip Cookies
The Paleo version of these cookies are basically the same as the Paleo and Vegan ones that follow except these contain eggs and dark chocolate chips. I make flax eggs to make the second one Vegan, while still keeping them Paleo, and use chocolate chips that are both Paleo and Vegan.

Paleo and Vegan “Oatmeal” Cherry Cookies
People I give these to are surprised when they learn these have no oatmeal since they taste so much like the ones many of us grew up on. While it was usually raisins that were the mainstay of these cookies, I prefer dried cherries. But I can make them with raisins or dried cranberries if you like.

Paleo and Vegan Snickerdoodles
Snickerdoodles are a timeless classic, beloved for generations. I’ve eaten a lot of different types, and my favorite snickerdoodles are the soft puffy ones - not the crispy kind you dunk in milk or coffee. I made a non-Paleo version for years that I loved and wasn’t sure it could be replicated with Paleo ingredients, especially one without eggs. But these exceeded my expectations! Plus I like not feeling guilty if I eat more than one since they are so healthy.

Banana Bread Muffins
Paleo Banana Bread Muffins are a healthy twist on classic banana bread. I offer three versions of these muffins, one with dark chocolate chips, one with roasted pecans (or walnuts) or plain, but with all the flavor of banana bread, it’s hard to call these plain. I can also make a version with both chocolate chips and nuts. If you want six of one version and six of another, I can do that, too.

Banana Bread Pecan Muffins
The photo for these shows a pecan half on the muffins, but if you prefer I can sprinkle the tops of these with more of the chopped toasted pecans added to the dough. Toasted walnuts or almonds can be substituted for the pecans.

These are identical to the above muffins but with the addition of organic maple flakes sprinkled to the tops before baking. Maple flakes are pure maple syrup dehydrated into crunchy flakes that look like tiny corn flakes. I coarsely chop them so they resemble turbinado sugar, but so much healthier and with much fewer calories. If you have a sweet tooth at all, I would recommend these. I can do six muffins of each per batch if you like.

I had a request from one of my taste testers for carrot cake muffins without nuts, raisins, and coconut so this is what I refer to as my no frills version. But I am working on another version that includes all the ingredients typically found in a carrot cake.

Pumpkin Muffins with Cinnamon Pecan Streusel
Moist pumpkin muffins with a sweet cinnamon pecan streusel are the perfect fall breakfast or snack treat. I use ghee (Indian style clarified butter) in the streusel, but if you prefer dairy free, I can use organic coconut oil.

Twisted Paleo Rubs and Seasonings


Chile Molido Rub

This is a blend of ground red New Mexico chiles and other spices that are toasted and freshly ground to produce a Southwestern steak with layers of flavor.
This is available in Hot, Medium and Mild.

Jamaican Jerk Seasoning

Scotch Bonnet chiles and a dozen other local Jamaican spices create a seasoning that has a kick to it with a slightly sweet hint. This comes in Jamaican Hot, Midwestern Hot and Gentler Jerk.

Memphis-Style BBQ Rub

Memphis BBQ is all about the dry rub, which provides a slightly sweet savory crust that is absorbed by the pork as it is slow cooked until it is fall-off-the-bone tender.

These start with a spice mix that is combined with almonds, cashews, pecans and walnuts. A hot maple toffee is poured over the nuts, then roasted until golden brown.
